Hyderabadi Chicken Biryani Recipe (Raw Yaqni)
- Ingredients:
- Chicken : 2 (1 kg. each)
- Basmati Rice : 1 kg
- Oil/Dalda ghee : 10 table spoon
- Onion : 5 medium size
- Lemon : 4 Ea.
- Yogurt : 2 small
- Garlic Ginger : 3 table spoon paste
- Red Chili powder : ½ tea spoon
- Turmeric powder : ¼ tea spoon
- Shah Zeera powder : ½ tea spoon
- Dal Cheeni : ½ tea spoon
- Salt : as required
- Green Chilly : 4 each to be cut in to small pcs.
- Dhania green : 1 table spoon
- Pudina : 10 leafs
- Food color : ¼ tea spoon
- Preparation of Yaqni:
- Cut onion in to thin slices and fry until brown, half of the fried onion to be crush
- Wash chicken and cut in to 8 pieces from each and rinse water from it
- Chicken to be mixed with: Item no.: 4 (half only) to 14
- Preparation of Rice:
- Wash rice twice
- Boil rice with pudina, dal cheeni and shah zeera
- When its half boiled, remove from stove and throw remaining water completely
- Put half of the total rice remain in the utensil and put Yaqni in to it
- Remaining rice to be put on Yaqni
- Final Bake:
- Add food color in to half cup of cold milk
- Put on top of the rice in the utensil
- Remaining fried onions to be put on top of the rice
- Remaining oil/ghee to put from top of the rice
- Keep air tight cover on the utensil
- Keep 25 min for baking on mild fire
- Your Biryani is ready to serve
- Prior to Serve:
Mix completely, rice and Yaqni and serve
