What Crepe Should You Make?

Crepes are a wonderfully versatile food. They range from sweet to savory and can be used for just about any occasion provided you adjust them a little. They look elegant and can be folded, cut or rolled to create a tasty dish. But what crepe should you make?
For the purposes of this article, we're going to assume you can make a basic crepe, so we'll only focus on fillings. What Crepes for Dessert? By far the most popular of the crepe dishes, these can be done in vanilla, chocolate and everything in between. Bananas and chocolate or Nutella is always a popular combination, but you can also use other fruit, such as strawberries with the Nutella. Try condensed milk and fruit instead of chocolate, or add some peanut butter to the mix. Chocolate and whipped cream are always a good combo and can be paired with ice cream, jam, etc. In fact an excellent dessert is simply a crepe smeared with jam and then rolled and topped with whipped cream. You might also want to try dulce de leche, marmalades or even syrup inside the crepes for a sweet treat. What Crepes for Dinner? Ah, savory crepes, perfect for a dinner or lunch. If you make a delightful white sauce, you can serve it atop the crepes to make it even more special. Add melted cheese or beer (or both!) to a white sauce to make it richer, or you can even go with a tasty wine reduction. There are neverending combos to use with savory crepes. Most people like to try chicken in the crepe, but you can easily use fish, beef or lamb, as well, cut into small pieces. Try adding cheese to just about anything . . . in fact a 3 cheese crepe with cream cheese, cheddar and mozzarella is delightful. Broccoli or any other vegetable (previously cooked) topped with cheese is a great filling for a dinner crepe and you can also combine Parmesan or mozzarella with ham, chicken, or pesto for a truly tasty meal. Leftovers also work very well in crepes, so don't hesitate to use them up with a sauce and cheese, or add some favorite herbs or salsa to really spice things up.
