Snowballs - Russian Tea Cakes Recipe
Preparation: 10 mts, Baking: 15 mts . Ingredients: 2 cups all-purpose flour/maida 1 cup butter, room temp 1/4 cup powdered sugar 1 tsp vanilla essence 2/3 cup almonds (or walnuts/pecans), lightly toast, cool, grind to a coarse pwd with a tbsp of flour 1 cup powdered sugar for coating 1 Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper/foil. 2 In the bowl, beat together butter and sugar until light and fluffy. Add vanilla, and combine well. Add the flour, mix until combined. Add the powdered nuts and mix well. Refrigerate dough covered with a plastic wrap for an hour. 3 Prepare small balls out of the dough, and place on cookie sheet at 1 1/2″ apart. Lightly press on top with the bottom of a glass. 4 Bake for about 13-15 mts till the edges are slightly toasted or till done. 5 Cool on a wire rack. The cookies will harden. Repeat with remaining dough. 6 Place powdered sugar in a flat tray and place the slightly warm cookies in it and roll in the pwd sugar. Cool completely. Store in airtight container. |
