Khoya cashew roll
Ingredients:

100 g cashew nut powder
50 g unsweetened khova (mava)
1/2 cup sugar
1/2 cup ghee (clarified butter)
2 tsp corn flour
a pinch of cardamom powder
2 tbsp water
Silver foil for garnish

For stuffing:

2 tbsp khoya
A pinch of saffron colour
A few strands of saffron
1 tbsp mixed chopped dry fruits (pista, almond)

Method:

In a kadai, add sugar and water. Make a 2 string syrup.
In a bowl, mix cashew nut powder and khova well.
Add it to the sugar syrup and mix well constantly on low heat.
Add 2 tbsp ghee.
Mix well for a min.
Add cornflour and mix well until it starts bubbling and starts to leaves the sides of the pan.
Add another 2 tbsp of ghee.
Add cardamom powder, mix and remove on a greased plate.
Allow to cool.
Mix all the stuffing ingredients together.
Spread it on cooled cashew-khova mixture.
Roll & cut into 1 inch pieces.
Roll in silver foil and serve.
