HOW TO MAKE BEEF CHILI WITH VEGETABLES

1. pounds ground beef 2 stalks celery, chopped 2 carrots, chopped 1/2 onion, diced 1 Anaheim chile, diced 1 Pasilla chile, diced 4 Jalapeno chiles, diced 8 tablespoons chili powder, toasted 4 tablespoons cumin, toasted 3 cloves garlic, chopped 1 large can peeled tomatoes 1 smoked ham hock 4 cups chicken stock 2 cups cannellini beans 2 cups kidney beans 1 cup black beans 1 cup Cheddar cheese, shredded 2 tablespoons green onion, diced 2 tablespoons cilantro, chopped Lemon juice Salt and pepper Canola oil STEPS: 1.Coat a Dutch oven or large saucepan with canola oil 2.Add the ground beef and saute it for 5 minutes or until brown. 3.Remove browned ground beef to a mixing bowl. 4.Coat the bottom of the pan with canola oil. 5.Add the celery, carrots and chilies. 6.Saute and season with salt and pepper while cooking the ingredients. 7.Add onions and garlic to the vegetable mixture 8.Continue sauteing the vegetable mixture. 9.Toast the chili and cumin spices in a separate pan over medium heat. 10.Add the toasted spices to the vegetable mixture. 11.Add the browned ground beef to the vegetable and spice mixture. 12.Add the canned tomatoes and stir them into the meat mixture. 13.Use the spatula to help chop the canned tomatoes. 14..Pour in the chicken stock after adding the ham hock to the meat mixture 15..Add the smoked ham hock to the middle of the mixture. 16.Stir to blend all the ingredients together. 17.Bring to a slow boil and then simmer for 1 hour 18.Add the beans and cover. 19.Simmer for another 2 hours. 20.Garnish the chili with cheese, green onion and cilantro. 21.Add a squeeze of lemon juice and serve. 22.Serves 10.[/ |
