Ingredients (serves 4)
4 small chicken *******, trimmed and tenderloins removed flour for dusting 2 eggs, lightly beaten 4 cups (280g) fresh breadcrumbs (about 10 slices of bread, processed) salt and cracked black pepper canola oil for shallow frying mash 750g washed potatoes, peeled and cut into 3cm cubes 3 whole garlic cloves, peeled 50g unsalted butter 1/2 cup (125ml) milk steamed green beans, to serve Method Cut each chicken breast in half, slicing through the middle to make two thin fillets. Place between sheets of plastic wrap and press lightly with a rolling pin to flatten slightly. Place flour, egg and breadcrumbs in separate bowls. Add salt and pepper to the breadcrumbs, and mix to combine. Working one at a time, dust each piece of chicken with flour, dip into egg, then press into breadcrumbs, making sure they are well coated. Place on an oven tray lined with baking paper and refrigerate for 10 minutes. Heat 2 tablespoons oil in a large non-stick frying pan over medium heat. Add chicken and cook in batches for 2-3 minutes on each side or until golden brown and cooked through. To make the mash, place a large saucepan of water over medium-high heat. When boiling, add potatoes and garlic, and cook for 15 minutes or until tender. Drain and return to pan. Mash with a potato masher, gradually adding butter and milk. Serve chicken schnitzel with mash and steamed green beans. Notes Fresh breadcrumbs create a crisper textured coating. If using store bought dry breadcrumbs you may need to use about twice as much and a bit more oil when pan-frying. its very filling. i didnt follow the recipe..i made it just dat way. everytime masala, masala is not good for the food..this time i tried alot of new receipes..sittting at home for one week. now from monday i hv to go to work..so i cant try any recipes. do u get chicken ******* there. |
